Step into the world of Italian baking with this relaxed and immersive sourdough focaccia experience, set in the beautiful surroundings of Eden Hall’s Georgian country house estate.
Led by chef de cuisine and food content creator Anderson Balico @chefandersonbalico, this demonstration-style workshop takes place in the charming granary kitchen at Eden Hall and explores the art of sourdough focaccia bread through storytelling, technique and tasting. Anderson brings years of professional kitchen experience, having baked in well-known Irish food destinations such as Avoca and Mueller O’Connell Bakery, alongside a strong personal connection to Italian food culture shaped by family traditions, good food and gatherings around the table.
This experience is designed to be both educational and also a perfect celebration of homemade bread, Italian baking traditions, and the joy of good food shared around the table.
What to expect:
1.30pm -2.30pm: Anderson will mix a sourdough focaccia dough from scratch, guiding guests through each stage of the process - from feeding a starter, to fermentation, shaping, topping and baking.
2.30pm-3.30pm: A selection of focaccias prepared and fermented in advance will be baked and served. The focaccias will be finished with seasonal and locally sourced ingredients, showcasing how simple dough can be elevated through quality produce and thoughtful combinations. They will be served with a fresh spring salad, creating a light, generous and sociable lunch-style experience, enjoyed with a glass of wine or Prosecco.
3.30pm - 4pm: Wrap up - Short tour of the grounds and gardens, weather permitting. Each guest will leave with a jar of live sourdough starter and the knowledge and confidence to feed it and bake with it at home alongside Anderson’s recipes.
